We spent the day celebrating my angel boy's birthday.
Your life was too short, little one.
We love you like crazy and miss you, pal.
For those of you who never met him, I'll share
his Angel food cake with you and yours:
12 eggs room temperature
1 1/2 C powdered sugar
1 C flour
1 1/2 tsp cream of tartar
1 C sugar
1 1/2 tsp vanilla
1/2 tsp almond extract
1/4 tsp salt
*Separate eggs and use only the whites (1 1/2 C worth) and let stand at room temperature for 30 minutes
*Add cream of tartar to eggs and beat on medium until foamy
*Add sugar a little at a time, add vanilla, almond extract, and salt
*Beat until a meringue is stiff and glossy
*Mix dry ingredients and add them 1/4 C at a time to the meringue and fold it in with a rubber spatula
*Spoon into an ungreased angel food cake pan
*Use a knife to cut through the batter and break any air pockets
*Bake 30-35 minutes or until cracks in cake feel dry at 375 degrees
